Yuzu is an ancient, natural hybrid between the Ichang Papeda (Citrus ichangensis) and the Japanese Satsuma mandarin (Citrus reticulata), grown commercially in Japan, where it is often used as a rootstock for various varieties of Japanese mandarin. Yuzu forms a narrow, upright, thorny tree, similar to Poncirus trifoliata. The fruit is yellow and about the size of a medium-sized mandarin, has a lemony flavor, and peels easily. It is used as a lemon in Japan, and the peel is used in spicy dishes. It is very cold-hardy, and like many Citrus ichangensis hybrids, its leaves may fall off during cold periods, but are later able to recover completely. In a fully dormant state, it tolerates temperatures down to -12°C and possibly lower.
